Not the prettiest piece of meat for sure. But this fatty cut off of the brisket has so much flavour that it’s impossible to resist! Not only is it an absolutely astounding sandwich filling, but the dripping it produces makes for an amazing replacement for butter on toast, or if you collect enough you can even use it for tastier and healthier* deep frying using natural fats instead of hydrogenated fats.

All of our Beef is hung and dry aged for 28 days in our Himalayan Salt Chambers to intensify the flavour and take it above and beyond what you'd find at your average supermarket butcher.
